Crispy Oven Fried Chicken

1 Chicken cut up in pieces
2 cups crushed gluten free Corn Chex cereal
2 large eggs
1/2 cup coconut milk (the kind in the can) or can substitute with milk
Salt and pepper
Butter

Beat the eggs and coconut milk until blended well
Dip the chicken in the egg mixture and dredge in the Corn Chex
Place on a large baking sheet that has been sprayed with non-stick spray
Salt and pepper
Place pats of butter on top of the chicken
Bake in the oven at 425 degrees for 45 minutes

Chicken nuggets: use about a pound of chicken tenders and bake for 15 minutes
