Lemon Nutmeg Sugar Cookie


2 cups
GF blend #2
1/4 cup potato starch
1/4 cup coconut flour
2 teaspoons baking powder
1/2 teaspoon salt
8 tablespoons (1 stick) unsalted butter, at room temperature
1/2 cup sugar
2 eggs
2 teaspoons lemon extract
1 tsp lemon rind
1/2 tsp fresh nutmeg

Sieve all flours, salt, nutmeg and baking powder in bowl. In mixing bowl cream butter and sugar until light and smooth, add the eggs, mix through, then add lemon extract and lemon rind. Add in the dry ingredients in smaller batches until each is fully incorporated. Bake in 350 oven for 10-12 minutes, until bottoms are pale golden.

This dough is almost non-stick and easy to roll out for sugar cut outs.

This cookie is not super sweet by itself, but once decorated with icing, the sweetness is perfect!!
