Fresh Peach/Coconut Bread Pudding
2 fresh peaches cleaned and cut in small pieces
3/4 cup unsweetened desiccated coconut
4 tablespoons brown sugar
1 teaspoons cinnamon
1 to 2 cups Almond Milk
2 eggs In a bowl combine bread, peaches, coconut, sugar and cinnamon, mix well ( I use my clean hands), then add 1 cup of almond milk and let sit for 5 minutes.
Stir through, if mixture still seems dry, add another cup and leave for a few minutes. In a separate bowl mix two eggs with a fork and add to the bread mixture.
Pour into a greased brownie pan or oven dish and baked in a preheated 375 oven for about 50 minutes. Serve with home made preserves or jam..... delicious!!
